I’ve met many, many sweet potatoes that I have not loved in my life. In fact, for the most part, I despise sweet potatoes. I think they taste like baby food. Blech.
I felt this way until I had my first sweet potato fries at a restaurant over a year ago. They were packed with tons of flavor and perfectly crispy. I dunked them in a little of bit of ranch dressing and I was in heaven!
I’ve been on a mission to make these fries at home and have them not taste like baby food to me. I’ve been trying to bake them to make them a bit healthier. I can’t achieve success with that method, so I dumped some oil in a pan one night and fried some up. It finally worked!
Sweet Potato Fries
-24 ounces of vegetable oil (I just eyeball half of a 48 ounce size bottle)
-2 Tablespoons cornstarch per sweet potato
In a dutch oven, heat the vegetable oil. Place a wire rack on a paper towel lined cookie sheet for when the fries come out of the oil.
Slice the sweet potatoes into strips. Place cornstarch and friest in a gallon size bag, seal, and shake to coat.
Once the oil is hot, add the fries to the oil. Do not dump the entire bag of fries to the pan at one time. Cook a handful or two at a time. When the fries have started to brown, remove them from the oil and put them on the wire rack to dry. Sprinkle with sea salt as they come out of the oil.
Eat and dip in your favorite sauce. I’m a huge fan of dipping these in ranch!
I’m working on trying to like sweet potatoes in other ways, but for now, this is the only way. And I’m pretty okay with that right now!
