This summer has been different than the past summers since I’ve had children. Previously I’ve had one child old enough to do certain things while the other toddles around behind us or has to sit in a stroller while the older sibling does something. This is the first time that both girls are old enough to enjoy doing the same things. It’s been a summer of swimming pools, play dates, swing sets, parks, baseball games, and sprinklers. It’s been fun. I’m completely enjoying these fabulous summer days.
These cookies got made one day when it was raining and I had some kids who wanted a snack! These cookies ended up being the perfect combination of sweet and salty! My six year old said they were the best cookies that she has ever had. Coming from a six-year old who considers herself a connoisseur of cookies, I take that as these ended up being some darn good cookies.
Chocolate Chip Pretzel Cookies (adapted from Taste of Home)
-1 cup of butter, softened
-1 cup sugar
-1 cup brown sugar
-2 teaspoons vanilla
-2 1/2 cups flour
-1 teaspoon baking powder
-1 teaspoon salt
-1 teaspoon baking soda
-2 cups pretzels, broken into pieces
-1 1/2 cups milk chocolate chips
Preheat oven to 350 degrees.
In the bowl of your mixer, cream together butter, brown sugar, and sugar until the mixture is fluffy. Mix in the vanilla and eggs.
In a separate bowl, whisk flour, baking soda, baking powder and salt together. Mix the flour mixture into the butter mixture slowly. After they mixtures are combined, mix in the pretzels and chocolate chips.
Place dollops of dough on a parchment lined or greased baking sheet.
Bake for 12-14 minutes until golden. Allow them to cool on the pan for 5 minutes before moving them to a wire rack to finish cooling.
