So, my husband has a guy crush. On Jeff Mauro of The Sandwich King on Food Network.
You see, the hubs is a big fan of different kinds of sandwiches and this is what Jeff is known for. Every time he sees Jeff’s show, we alway have to make something that he thinks looks good. Which is exactly where the inspiration for this recipe came from! This slaw recipe is a perfect addition to a summer meal!
Sriracha Cole Slaw (adapted from Jeff Mauro)
-1/2 cup mayonaise
-2 Tablespoons apple cider vinegar
-1 Tablespoon deli style mustard
-1 Tablespoon Sriracha
-2 teaspoons sugar
-1 teaspoon celery seed
-1 bag cole slaw mix
-salt and pepper to taste
Mix the mayonaise, vinegar, mustard, Sriracha, sugar and celery seed in a large bowl. When this is mixed, add in the cole slaw mixture and coat with the mayonaise mixture. Add salt and pepper to taste. Allow to chill for at least 30 minutes. This tastes best when it is allowed to sit overnight to allow the flavors to marry.
I hope everyone is having a wonderful summer this far! School is out for the summer and we are enjoying our days! I have to say that cooking and baking kind of hit the back burner for me for a while as we tried to get through the end of the school year. It’s been crazy busy between my job, the husband’s job, the kids’ activities and me taking a few classes. I’m happy to say that we have made it though and we are now determined to enjoy summer!
