Holy smokes, what a week! I don’t remember the last time that we have been so busy! Between work and kids and other commitments, the blog had to go by the wayside last week! We ate out more than I’d like to admit, my house looks like a tornado went through it and sleep was not in abundance.
Thankfully, last week is over and the weekend has arrived! We have no big plans and for that, I am thankful!
Last night, we got off of work and headed home for dinner. Friday nights have turned into pizza night at our house which is a tradition that I am quite enjoying!
This pizza recipe was on that we weren’t sure of when it was happening, but turned out to be really good!
Chicken Ranch Pizza
-pizza dough (make your own or purchase your favorite!)
-1/2 cup ranch dressing
-2 boneless, skinless chicken breasts, cooked and cubed or shredded
-3/4 cup mozzarella cheese
-3/4 cup cheddar cheese
-toppings of your choice–we used spinach and jalapeños
Preheat oven to 425 degrees. Shape pizza dough onto a stone or baking sheet. Bake for 5 minutes.
Pull crust from the oven. Cover evenly with ranch dressing. Add chicken and additional toppings. Top chicken and toppings with cheese. Bake until cheese has melted and starts to turn golden brown.

Since this was our first time making this pizza, we divided the pizza into four sections. One just had chicken and cheese, one with chicken and spinach, one with chicken and jalapenos, and one with chicken, spinach and jalapenos. Our favorite was the one with everything on it. The kids liked the section with just chicken.
We’ll be making this again as it was really good! I was a bit leery while making it because I wasn’t sure about ranch on pizza. I’ll also be adding some green and red peppers and black olives next time I make it!

We love ranch on pizza! Next time try adding bacon, garlic and chopped tomatoes….so good!
