At our house, we can easily fall into a slump with lunches and fall into the trap of grabbing something from a fast food restaurant for lunch. I try to curb this as much as possible, so it usually means I whip something up after dinner on Sunday night for lunches during the week.
One of my favorite, easy meals to make is Taco Soup. This soup is filling and tasty! You can add or subtract ingredients and it always tastes good!
Taco Soup
-1 pound hamburger
-1 small onion, diced
-taco seasoning (or you can buy a packet)
-3/4 cup water
-3 cups chicken broth
-1 can diced tomatoes
-1 can diced tomatoes and green chiles
-1 can chili beans
-1 can kidney beans
-1 can black beans, drained and rinsed
-1 can pinto beans or northern beans, drained and rinsed
-1 packet ranch dressing mix
-1 cup frozen corn
Brown hamburger and diced onion in a Dutch oven or large pan. Drain grease when meat is browned and onions are translucent.
When meat is browned, add taco seasoning and water. Allow mixture to simmer until thickened. When mixture has thickened, add beans, tomatoes (both kinds), ranch dressing mix and chicken broth. Bring to a boil and allow to simmer for 30 minutes.
Add frozen corn. Allow to simmer for 30 more minutes.
Top with shredded cheddar cheese, sour cream, avocados, black olives or anything else your heart desires! Serve with tortilla chips (like these!), crackers or bread!

Thats a great idea to make soups for lunches throughout the week. I have found that my girls will eat the beans and chopped up veggies if they are in soup form. They would like this one a lot – and I like that it is so easy to pull together and it sounds like it makes a HUGE batch.

i love making a lunch for the week on sundays. i usually make salad or pasta but this is a great idea!
I do the same thing on Sundays, except I make dinners for the week (lunches are usually just a salad anyhow). It makes life so much easier.
I love lots of beans in my soups – keeps me fuller longer! I have a three bean chili on my menu tomorrow that I made over the weekend, I ended up adding 1/2 a cup of salsa verde and that gave it a nice kick!
Taco soup is one our favorites as well, I like your addition of the ranch seasoning.
