Have I ever told you I don’t like homemade brownies? I’m just not a fan…maybe I’ve only had some bad ones. I prefer the wonderfulness of a box mix of brownies. They are always ooey and gooey and delicious. So, as I was coming up with how to make this recipe, I completely considered making brownies from scratch for about three seconds. After three seconds I changed my mind. I figured, why make from scratch when I know I’m not a fan?!
So, to the box of brownie mix I went to create these cute little Valentine’s themed desserts that were a hit with my kids!
Brownie Cookie Ice Cream Sandwiches
-1 box of brownie mix prepared as the directions state
-Ice cream
-sprinkles
Mix the brownie batter up as the box states. Using a Tablespoon or cookie scoop, drop scoops of batter on a parchment lined cookie sheet. Bake for 8-10 minutes at 350 degrees.
Allow to cool for 5 minutes on the pan. Then, transfer to a wire rack to finish cooling. Continue making cookies until the batter is gone.
After cookies have COMPLETELY cooled, take ice cream out of the freezer and allow it to soften. When ice cream is soft, add to one cookie and add another cookie on top to make a sandwich. Roll in sprinkles. Place on to a cookie sheet in the freezer immediately and allow to harden.
After ice cream has hardened, eat!
These were so cute and the girls loved them! You can use any flavor of ice cream that you like as well as change up thesprinkles to different holidays or just to your preference!
So, after all that….does anyone have a brownie recipe that I can make that rivals the taste of a boxed mix of brownies?!?
