I am tired.  I haven’t slept all night for four days.  That’s how long our youngest has been sick.  We thought she was turning the corner yesterday and on her way to being well.  We were proven wrong at 3 am when her temperature came back.

Due to the fact that I am tired, warm, comfort food is definitely necessary to survive my days!

 

Sausage Potato and Cabbage Stew via Good Eats Girl

Sausage, Potato, and Cabbage Stew (Adapted from Rachael Ray)

-1 pound polish kielbasa, cut into slices

-1 small onion, diced

-5 cups chicken broth

-2 Tablespoons white wine vinegar

-4 Tablespoons brown mustard

-1 Tablespoon dijon mustard

-1 1/2 pounds of gold or red potatoes

-3-4 cups of chopped cabbage

In a dutch oven or other large soup pan, place the sliced sausage and onion into the pan.  Cook sausage and onions until onions are tender and start to get transparent.

Add broth, vinegar, mustard, and potatoes.  Bring to a boil and cook for ten minutes.  After 10 minutes, add cabbage.  Cook until cabbage and potatoes are tender.

Serve with some crusty bread….like this!

This stew is one of our favorites.  It’s a nice, filling meal that is perfect for a chilly day!

I hope that you have a wonderful weekend.  We are headed to the doctor today to get the little one checked out!  Hopefully she will be on the mend soon!

  1. I could use a little comfort soup right about now, too. Hope your little one feels better soon! I remember from when I was little how much work it is for parents when their kid is sick.
