Okay, so I was absolutely going to post about something else today. You’ll have to wait until later for that recipe because this recipe was so great that I had to share it with you immediately.
I was home yesterday with a sick kiddo. Not fun, but this did mean that during some naptime I was going to have a few hours to myself. When I have a few hours, I cook. And cook some more! I knew that we were having soup for dinner and needed some bread to go with it, so I went on a recipe search!
I figured out how to make Artisan Bread. It is so stinkin’ easy I can’t believe that I haven’t made it before! All you need is four ingredients! It doesn’t get any simpler than this!
Artisan Bread (adapted from Jo Cooks)
-6 1/2 cups all purpose flour
-3 cups warm water
-1 1/2 Tablespoons yeast
-1 Tablespoon salt
Put all of the flour in the bowl of your stand mixer. In a separate bowl, mix together the water, yeast and salt. Using the dough hook attachment, add the liquid mixture to the flour and mix until combined. When combined, (this will be a super sticky dough) transfer to a large greased bowl. Cover the bowl tightly with plastic wrap. Poke two small holes in the plastic wrap with a toothpick to allow the gases to escape. Allow dough to rise in a warm place for two hours.
After two hours you are going to be ready to shape your dough. Before shaping, line your baking stone or cooking sheet with parchment papers. Then, flour your hands liberally and divide the dough in to two pieces. If you need to add more flour to your hands, do so. Shape each piece and place on your parchment lined baking stone or cooking sheet. You can make whatever shape you desire. I went for circles because they are easiest! :) Sprinkle some flour onto the top of your shaped dough. Allow to rise for 30 more minutes in a warm place.
Preheat your oven to 450 degrees. Place 1 1/2 cups of water in a cake pan (or other oven safe pan) and place on the bottom rack of your oven. (This will help your bread get super crispy) Then, cut slits in the top of your loaves. When oven in preheated, place dough in your oven for 30-35 minutes on your oven’s middle rack.
When dough is done, allow to cool on wire racks.
Serve!
This bread has a wonderful crusty outside and a soft, wonderful inside. I am seriously enamored with this bread. I was shocked at how great it was!
It’s a perfect bread for dipping into soup, dipping into oil, or just eating on it’s own. I am already dreaming of variations of this bread to make.

I have literally made that bread every weekend for a year! My SIL absolutely loves it – so I make a loaf for us and a loaf for her each week. Just had some with stew tonight. So good!
