Cupcake Cookies

Good Monday morning!

Monday is always that day that I refuse to admit is going to arrive.  I love the weekend.  Like a lot.

Thankfully, this weekend was able to end with some football and good food!  And, don’t let me forget some great commercials.

I think that my favorite commercial was the M&M commercial where the red M&M was singing Meatloaf’s “I Would Do Anything for Love (But I Won’t Do That)”.  It was seriously hilarious!

 

 

As I was getting our football spread ready, I knew I needed to make something yummy for the girls for dessert!  I’ve been seeing recipes all over Pinterest for cake batter cookies, so I decided to give it a try.

These cookies did not disappoint and my five year old declared that they taste like a cupccake!

 

Cupcake Cookies via Good Eats Girl

Cupcake Cookies (adapted from here)

-1 box vanilla cake mix

-1.5 teaspoons baking powder

-2 eggs

-1/2 teaspoon vanilla

-1/2 cup vegetable oil

-1 cup sprinkles

Preheat your oven to 350 degrees.

In a bowl, mix cake mix and baking powder.  Add eggs, vanilla, and oil.  Mix well.  Then, add in the sprinkles.  Mix.

Using a cookie scoop or tablespoon, drop cookie dough onto a parchment lined or greased cookie sheet.

Bake for 10 minutes.  Cookies will be soft.  Allow them to rest for 5 minutes on the cookie sheet before transferring them to a wire rack for cooling.

Allow them to cool and enjoy!

My five year old is completely right…they taste like a cupcake in cookie form!

I’ll also be making cookies from cake mixes again…I never thought that this would work. It did.  And they were so stinkin’ good!
