The Super Bowl is quickly approaching and we are racking our brains trying to figure out what in the world that we are going to make to eat during the Super Bowl.  I always like to try to make something that we haven’t made before or haven’t made in a long time in addition to some of our favorites!

As the Good Eats Guy and I were trying to figure it out, we started talking about making onion rings and then it clicked!  We were going to make our version of one of our favorite things from Chili’s.  The Onion Ring and Jalapeno Stack.

Here’s our version.  I promise you…you won’t be disappointed.

We sure weren’t.

Copycat Onion Ring and Jalapeno Stack

Copycat Onion Ring and Jalapeno Stack

-4 Medium Onions, sliced into wedges or rings

-4-6 jalapenos, sliced

-1 cup flour

-1 1/2 teaspoons salt

-1/2 teaspoon baking powder

-1/2 teaspoon pepper

-1 cup milk

-2 eggs

-vegetable oil for frying

Mix flour, salt, baking powder, pepper, milk, and eggs in a bowl.  Dredge onions and jalapenos in batter.  Fry in oil until the onions and jalapenos turn brown.  Remove from the oil and allow to drain on a paper towel lined plate.

Serve with your choice of dipping sauce.  Oh, and a cold beer!

I hope you had a wonderful weekend!  I spent WAY too much time watching Downton Abbey.   Thankfully, our house was clean, my lesson plans were written, and the laundry wasn’t out of control…I had the time to watch!  :)  I just LOVE the characters on the show…they are so wonderful!  I also love the music…it’s beautiful!

    This is why I love having a deep fat fryer – for dishes like this! I totally want the jalapenos! You can keep the onions :D
