I don’t remember the last time I bought a bag of tortilla chips to eat. Wait, there was a tortilla chip purchase in December.  I took a dip to work a few weeks ago and didn’t have time to make these, so I bought two bags.  I felt bad the entire time my coworkers were eating them because I wanted to make these baked tortilla chips for them!

Lately, my go to chip is a baked tortilla chip.  Quite frankly, I’m kind of in love with these chips.  They are so stinkin’ good.

Baked Tortilla Chips

Baked Tortilla Chips

-1 package of tortillas

-olive oil

-sea salt

Spread a small amount of olive oil on one side of tortilla.  Sprinkle with sea salt.

Cut tortilla in half.  Then cut each half into thirds.  Place on a baking sheet in a SINGLE layer.

Bake at 350 degrees for 8-12 minutes depending on your oven!

You can serve these chips with anything you need tortillas chips for.  Think dips, taco soup, and on and on.  The opportunities to use these are endless!

If you can’t think of anything and you need a quick dip recipe…here’s my favorite.

Ro-Tel Dip

-1 pound browned hamburger

-32 ounce block of Velveeta

-1 can Ro-Tel (diced tomatoes with green peppers)

Put all of these ingredients in your crock pot.  Cook for about two hours on a medium setting. You want the cheese melted and the dip warmed through.  You can also cook this on low for up to four hours.

It doesn’t get much easier than that!  This is one of our go to football watching snacks…it’s so good!  The Good Eats Guy wants me to tell you to add a dollop of sour cream to the top of your bowl of dip and mix it in.  He loves the dip like this!  I like it without!

Did you watch the Golden Globes last night?

The Golden Globes is my favorite awards show to watch and I thought that Tina Fey and Amy Poehler did an amazing job hosting the show.  I definitely think they should be back!

I hope you have a fabulous Monday…I’m not ready for the weekend to be over.  I really wish it could be the weekend every day!  :)

I need to make some homemade tortilla chips for the Superbowl. They are so much tastier than the bagged ones. That dip looks great too!
