I love blueberries and muffins, so when I saw that Iowa Girl Eats posted a recipe for Blueberry Muffin Top cookies I went running into my kitchen to recreate these beauties.

I’m so glad that I did because these cookies seriously rock.

 

Blueberry Muffin Top Cookies Slightly adapted from Iowa Girl Eats 

You’ll Need….

-2 cups flour

-2 teaspoons baking powder

-1/2 teaspoon salt

-1/2 cup salted butter, softened

-1 cup sugar

-1 egg

-1/3 cup milk

-1 teaspoon vanilla extract

-zest of one lemon

-1 1/2 cup fresh blueberries, rinsed

Preheat oven to 375 degrees. Combine flour, baking powder, and salt in a bowl, set aside.

In the bowl of your mixer, cream together butter and sugar until well combined. Add in egg and beat until combined. Add milk, almond extract and lemon zest then beat until combined.

Slowly add dry ingredients into the wet ingredients, and mix until combined. Gently fold in blueberries. This will seem kind of tough, but keep folding until the blueberries are in the dough!

Refrigerate the dough for at least one hour, then shape into large balls. Bake for about 15 minutes and let cool on a wire rack.

These were awesome!  And they were kid approved!

I sent the extras to work with my hubby this week and my four year old was sad that she didn’t get to eat any more of them.  I’m going to have to make another batch this weekend….I’m wondering how they would taste with strawberries and blueberries?!?!  We’ll see what creation I am able to come up with this weekend!

  6. Do they really taste like muffin tops? If they do I am so making these – they sound great. You could put some streusel on top of them, too.

    I LOVE muffin tops! I also love blueberries, but I definitely prefer them in a baked good to eating them raw.
