Good morning! I hope everyone is having a fabulous weekend!
We have had a pretty low key weekend so far. We went to lunch yesterday at Old Chicago where I ordered the Chicago Beef sandwich with fries!!!
Very tasty!
We ran errands and got groceries after lunch and then we headed home to relax in front of the fire and catch up with our DVR for the evening!
It has been so nice to not have to rush around like crazy people all weekend long!
What did you do this weekend?
This morning it was time to make baked eggs for breakfast!
I have never made these before, but I was ready for something different besides just omelets, scrambled eggs, or over easy eggs.
Baked Eggs
-ramekins
-eggs
-spinach
-green peppers
-olive oil
-cheese
-hot sauce
-whatever other veggies, meats, etc. that you would like to add!
Pre-heat oven to 350 degrees.
While the oven is preheating, add peppers and a small amount of olive oil to a small frying pan and saute until cooked through.
Chop spinach into small pieces and add to ramekin.
Add other veggies and cheese on top of spinach base.
I then added a few splashes of Frank’s hot sauce on top of this.
Crack eggs on top of this mixture.
Break the yolks with something sharp. I just used a small knife.
Bake for 15 minutes.
And then you have baked eggs!
These were delicious! I will definitely be adding these into our weekend breakfast rotation. And I’ll be adding some bacon to them. :) We didn’t have any, so I couldn’t do it today!

The little people in our house decided they wanted to have cereal, toast and yogurt smoothies for breakfast.
As you can see they are having a very relaxing breakfast sitting around in their robes and being waited on by their parents as they kept asking for additions to their breakfast!
Today is all about writing lesson plans, doing laundry, baking, and mopping the floors. I’m looking forward to the lesson plans and baking, but am not excited about the laundry and mopping. Yuck!
What is the chore that you dislike the most?
Mopping and laundry are two of my least favorite things to have to do around the house. I’d rather clean the bathrooms. :)

I’m the opposite–I’d MUCH rather do laundry & mop floors than clean the bathrooms. I HATE that chore! Those baked eggs look REALLY good…I’ve never made them before, but I might have to try them (with bacon)!
Bacon always makes everything better!
I absolutely hate vacuuming. I also hate spelling it apparently–took me three tries! lol
Right now I dislike laundry but am sure when I don’t have to lug the clothes to the communal laundry room I will like it better! The eggs look delicious and the girls are so precious!
Lunch out looks fabulous!! And I love eggs any way. I have never done them baked. I will do laundry and mop for you, if you dust for me

You can never go wrong with an Italian beef! With hot giardinera – yum! I love baked eggs – need to make them again soon – they are so easy to reheat during the week.
Emptying the dishwasher- I know it beats washing and drying dishes, but its my least favorite chore!
I never thought to make extras to reheat! Good idea!
Oh, I hate hate hate to mop/sweep! It took me an hour this morning to do my whole house. Ugh!
The chore I like least is cleaning the showers (ugh).
What a wonderful way to spend the weekend. If only we could remember not to even bother to get out of our pajamas.

Thanks for visiting my blog! I am subscribed to yours now – we have very similar philosophies on blogging and feeding the family:-) This is a great way to cook eggs. For whatever reason I am not a great scrambler so the baked version would be great – and I love getting in some veggies, cheese or bacon in my morning eggs on the weekend! Your girls are adorable….sounds like my house with all of the additions to their meals..ha ha!
I would definitely rather do laundry or vacuum over cleaning the bathroom.

I love baked eggs. They’re so simple and always turn out so good.
Laundry is easily my most hated chore. I don’t so much mind the actual washing part, but the folding and putting it away – that’s brutal.
I don’t mind vacuuming, but I DETEST mopping. Thank heavens, the kids are older now and they think it is fun to wipe up spots now. ha ha. After I sweep or vacuum, they race around the house wiping up spots with damp rags. It has really cut down on how much mopping I have to do. Not sure how long this will last, but I’m loving it.

Those eggs look delicious!!! I too get bored of my omelets and scrambled eggs, I’ve never attempted to bake my eggs. I will have to give that one a try!

Oh your children are beautiful! What a nice weekend – sounds like fun. And the baked eggs look fantastic. I’ve never tried them but will have to now! I adore spinach and also have a love of asparagus with scrambled eggs – go figure! Have a lovely week.
