Homemade Baking Mix

So, it’s time to get back into the swing of things around here.  I have been super busy with life and my poor blog got away from me.  But, one of my resolutions this year is to spend a bit more time on myself and my blog is a way to do just that!

So, as an effort to get myself back into my little blog, I want to share with you a recipe that I made the other day.  You see…I wanted to make biscuits for dinner the other night.  I didn’t have any baking mix in the cupboard and so I went perusing a recipe for homemade baking mix.  This is way better than the stuff in the box….it’s seriously amazing.

Homemade Baking Mix

What you need….

-5 cups of flour

-1/4 cup baking powder

-2 Tablespoons of sugar

-1 teaspoon of salt

-1 cup of butter or margarine

Mix together flour, baking powder, sugar and salt. Cut in butter until mixture is crumbly.  Store in an airtight container for up to 6 weeks or in the freezer for longer storage.

 

 

 

With this, I have made garlic cheddar biscuits, pancakes, shortcake, and a few other things.  This is now a staple in my refrigerator as it is good for up to 6 weeks!

For biscuits….Just add 1/3 cup of milk or water for every cup of mix and you’ll be ready to bake them!

For pancakes….add 2 eggs, 1 cup of milk and 2 cups of mix.  Mix up and make pancakes!  Delish!

As for what’s going on with us….we are still trying to get back into the swing of things from our Christmas traveling.  We just got back from Iowa on Wednesday and brought quite the car load home!

Now that everything is clean, I can relax a bit and ring in the New Year with a clean house.  What are your New Year’s Eve plans??

We are hanging out at home, making a good meal, and playing some games with the kiddos….there may be a bottle of wine thrown in there, too!
