A fall Saturday!

Hope everyone is having a wonderful weekend!

We started the day at the pumpkin patch picking out our stash of pumpkins!

And hanging out in the petting zoo.

I would say that we did well…we needed pumpkins for carving and some for painting.  We also needed a few to just sit around and be pretty!

After spending the morning at the patch, we went to lunch at our favorite Mexican restaurant!

As you can see by the Littlest Miss’ face, the girls love it!

Then groceries were bought and Halloween costumes were shopped for.  We totally struck out at the stores, but found the exact costumes they wanted when we got home and shopped online.  :)

Dinner tonight is one of our new favorite recipes.  I’ve been obsessed with this cookbook lately!

Most everything that I have made from it has been amazing!  I’ve taken this recipe and adapted it to our tastes.

 

Super Scampi Pasta adapted from Rachael Ray’s Look + Cook

 

-3 tablespoons olive oil

-6 garlic cloves chopped

-1.5 teapoons crushed red pepper

-1 cup dry white wine

-1 cup of chopped basil leaves

-4 cups of chicken broth

-3 tablespoons butter

-2 cups water

-1 pound linguine

-1 bag shrimp, thawed, peeled, and deveined

-zest and juice of one lemon

-salt and pepper

 

Heat the olive oil in a large skillet over medium heat. Add the garlic and pepper flakes to the pan and cook for three minutes.  Add the wine to the pan and let reduce for 1 minute.  Melt the butter into the sauce.  Add the chicken broth and water to the pan.  Bring to a boil.  Add the pasta and shrimp the pan and simmer until the pasta and shrimp is done.  About 8 minutes.  Stir in the lemon zest and juice.  Add the basil.

I served this with some homemade focaccia bread!

This is just SO good and it’s so simple to make!

This meal was a perfect ending to our day!  We devoured it!  Even the girls ate it right up!

I’m now in the middle of watching the Hawkeye game and trying to catch up on some blogs!

    I used to love going to the pumpkin patch. I cant wait until I can take my kids . . . you know, when I finally have some. :)

    I wish that my parents would have raised me eating seafood, because I will not touch seafood with a ten foot pole these days because I think it tastes so bad.

  8. This meal sounds like my perfect comfort food. I am really into shrimp these days, especially when LOTS of garlic is involved!
