I’m obsessed. With this.
Yup. I finally broke down and bought a panini press and I am in love.
I am paniniing (Is that a word?) everything in sight. I’m going to be sad when I have to go back to work and can’t stick my lunch in the panini press. I wonder what my co-workers would think if I came walking in with a panini press!?!
Anyways, I’ve also professed my love many times for French Dips, so I thought what the heck, I’m going to combine these two things.
I took the first bite and it was like the heavens parted and I could hear angels singing. These were so good, people. SO good.
French Dip Panini
-beef roast–mine was 3 lbs.
-2 packets onion soup mix
-2 beef boullion cubes
-4 cups of water
Put everything in the crockpot and set on low for 8 hours. Walk away. If you are feeling ambitious, season and sear your roast before you put it in the crock pot…like I did here. But I was feeling a little lazy and forgot to thaw my roast, so I dumped the frozen hunk of meat into the crock pot.
While I was waiting for the roast to finish the last 20 minutes, I sauteed a red and green bell pepper, sliced pepper jack cheese, and cut the french bread and buttered the outsides of it.
I pulled the roast apart and started assembling. First piece of bread, a layer of cheese, some meat, some peppers, another layer of cheese and the second piece of bread. And then I put them in the panini press. And I waited.
And this came out.
Yum.
Now, if you don’t have a panini press, it’s okay. Just put them on the grill. Or in a pan on the stove. Or you could probably make this work in the oven. Whatever your method….make these!
What is your favorite panini combination? I’ve been tempted to use fruit in a sandwich like this, but I’m a little scared!

oh yum! Toasty sandwiches rock. I like make mozzarella and tomato sandwiches in our press and apple and brie (SO good!)
you should definitely try fruit! or how about a tortilla with peanut butter, chocolate and sliced bananas?!

I’m pretty much a sucker for any combo that includes chicken and bacon. Something about the two smushed btwn good toasted bread…
paninis are delish! I love them with a melty cheese, pesto, veggies, etc. YUM!

I love my panini press as well! I think a great dessert panini would be bananas, strawberries and Nutella:)
Great idea to make a panini with a French Dip. One of my favorites and I would love it toasted up in a panini maker!
I would love to have a panini press! I use my George Foreman sometimes, but its tricky because of the angle. Sometimes I lose half the cheese. Its not the same.
That looks so good. Might have to buy myself a panini press, too!
