Shrimp and slaw tacos…

I’m so sleepy.  The little ones thought that it would be a great idea to wake up at 4:45 this morning.  I was not as excited as they were to be awake.  I think that coffee is going to fuel me through the day today.

In order for me to forget about the ridiculous hour that I had to wake up today, let’s talk about dinner last night.  Last night was going to be one of those meals that we just ate and I wasn’t going to blog about.  I was ravenous after we had spent the day at a water park with the kids and didn’t feel like making it pretty and all that.  It ended up being so darn tasty that I feel compelled to tell you about it.  Please ignore the ugly brown plate and crappy lighting in these pics as I just took a few pics on the fly.  Just go and make these for dinner.

You see, I told you about the sliders that we made and we are kind of obsessed with the taste that they had.  So, I had some limes left over and some broccoli slaw left in the bag that I had no idea what I was going to do with.

So, we whipped up some shrimp and slaw tacos!  And, oh my goodness, were they good!!

Shrimp and Slaw Tacos

-raw shrimp–peeled and deveined–I used an entire bag of frozen shrimp that were thawed

-1/2 a tablespoon Emeril’s Essence Seasoning

-approximately 1-2 Tablespoons of Olive Oil

-bamboo skewers

-tortillas

For the slaw…

-1/2 a bag of broccoli slaw

-juice of one and a half limes

-2 teaspoons of sugar

For the sauce…

-1/2 cup of sour cream

-zest of one lime (I used a lime that I used for the slaw.)

-juice of 1/2 a lime (I used the other half of the lime that I didn’t use in the slaw.)

 

Mix the ingredients together for the slaw and refrigerate them for at least 30 minutes to let the flavors mix.  Do the same with the ingredients for the sauce.

Thaw shrimp if they are frozen.  Peel and devein if you need to.  Toss shrimp with olive oil and seasoning.  Skewer the shrimp.  Grill the shrimp for approximately 3 minutes on each side.

Add all ingredients to a tortilla.  We also added refried black beans, salsa verde (another fabulous obession in this house), hot sauce, and cheese.

 

These are really great.  We’ll be making them often.  All through dinner our conversation was all about how good these were and how we could eat them every day.

So, now I’m just sitting here sad that we ate everything and that there are no leftovers for me to eat for lunch.  I’m thinking that all of these ingredients over a bed of romaine would be super tasty!  I may have to try that next!

  1. For some reason or another, I’ve never messed with taco add-ins… I keep meaning to try shrimp or fish tacos, but fall back on my standards… one day… lol
