Yummy sliders….

Wow!  I can’t believe how fast the summer is going!  I have to apologize for my lack of posting this month….we have been going nonstop as the Good Eats Guy has the month of July off of work.  I’ve been enjoying moments like this….

and maybe a few too many glasses of this…

and a baseball game on one of the hottest days of the summer…

I also lost my love of cooking for a few weeks and was totally uninspired.  I’ve gotten that love back a little bit and finally feel like we are eating things that people would like to see!  I got my inspiration back last week when I got the new Taste of Home magazine in the mail!  I saw the recipe for the Baja Chicken and Slaw Sliders and knew that I needed to recreate them!

Baja Chicken and Slaw Sliders  adapted from Taste of Home

The Chicken…

1 lb chicken breasts (cut up and pounded to fit on buns)

-1/2 teaspoon cumin

1/2 teaspoon chili powder

-1/4 teaspoon pepper

-1/4 teaspoon salt

-King’s Hawaiian sweet rolls (or something similar…this is what my store had!)

The slaw…

-2 cups broccoli slaw mix

-1/2 of a red pepper finely diced

-5 teaspoons of lime juice

-2 teaspoons sugar

The sauce…

-finely diced jalapenos (I used about 4 teaspoons…we like things spicy.  I also just used the slices from a jar.)

-1/2 cup sour cream

-zest of 1/2 a lime

-3/4 teaspoon lime juice

 

Combine the sour cream, lime zest and lime juice in a bowl.  Refrigerate.  I made mine about three hours before dinner as I wanted the flavors to combine well.

Combine all of the items for the slaw.  Again refrigerate.  I did this at the same time as the sauce.

Season the chicken breasts and grill them until they are done.  I also grilled the buns!  And by saying that I grilled, I mean that the Good Eats Guy grilled while I told him what to do!  :)

I piled everything on the buns and also added some lettuce and tomato.

I served with grilled asparagus on the side.

Sorry about the dark pics….my camera was dead, so I had to use my phone!  I couldn’t let this meal go undocumented!

I’m sitting here wishing we wouldn’t have eaten them all as I’d love some leftovers right about now.  They were so good and will be making many appearances in our meal rotation.  The tastes were so summery and fabulous!  You really need to make these soon!

We are off to enjoy the last week of the Good Eats Guy’s summer vacation this week.  I’m thinking some sunshine is definitely in our plans for the week!  I also should go and figure out what we are going to have for dinner tonight!
