Fruit salsa…

Good Morning!!  I hope you all had a fabulous 4th of July weekend!  We went non-stop from Saturday until last night!  It was a crazy, fun weekend that involved lots of time swimming, hanging with friends and, of course, lots of food!

Last night we were headed to grill with some friends and I just needed to bring something to snack on.  I decided to bring fruit salsa with homemade cinnamon sugar chips!

 

For the salsa, I just cut up a bunch of fruit that I had in the fridge.  I used strawberries, blueberries, two plums and two peaches.  I usually like to add raspberries and blackberries, but I didn’t have any!

After everything is cut up I add a bit of cinnamon and the juice of one lime.  Mix and let it sit for a while!  The flavors mix together and it’s AWESOME!!!   I don’t have an exact cinnamon measurement….I don’t like the flavor to be overpowering, so I just do a few shakes.  If you like more cinnamon, then add more!

 

For the chips, I brush tortillas lightly with olive oil and sprinkle with cinnamon and sugar.  I then cut the tortillas into triangles and bake at 425 until they are finished!

These are so easy!  And a great treat for kids too!  They go crazy for these!

This is always a hit with people and it’s so easy to make!  Just make sure you don’t forget about your chips…I’ve been known to burn a few in my day!  My sister will confirm the fact that you need to watch them!  It’s kind of easy to forget about them!  :)

We are headed out to the pool this afternoon.  I think I’m just going to move in there for the summer!  Then back home for dinner and a work out.  I have to say…Insanity is awesome, but holy cow, it’s quite the workout.  I can’t remember a time lately that I’ve gotten such a workout!  Hopefully we’ll see some good results at the end of the program!

  1. One of my coworkers took a cooking class and made a similar salsa and tortilla chips, it was oh so good! Thanks for reminding me of such an awesome recipe, and that I must make it this summer!

    I’ve never made a fruit salsa before. I’ve always wanted to but love the heat from regular salsa.

  5. I love making my own chips like that. So much healthier and less expensive. That fruit salsa looks pretty darn tasty, too!! I think I might just have to make it. Perfect way to use up all these berries I have in my fridge!

    And, you are correct, those little chips are darned near impossible to remember to take out of the oven.
