Wowza! What a few weeks it has been! I’m glad to say that two weeks after school got out I am FINALLY on summer vacation which means more time for blogging and good cooking! I’m so excited!
I spent last week attending class. Mapquest said it would take me an hour and 15 minutes to get there. It didn’t take into account road construction. I ended up driving 2 hours each way and then sitting in class for 8 hours each day. It was a long week. Needless to say, when I got home at night I ate dinner, did homework, and crashed!
We had a busy weekend this weekend. We had family in town because it was the Little Miss’ dance recital!
She was just adorable! It was so much fun seeing her with her little friends dancing on stage! I was so proud!
Then yesterday we saw Cars 2 and closed the weekend with dinner on the grill and a specialty brew.
I bought this to have with dinner last night.
Yup, I spent 11 dollars on a 4-pack of beer. And it was worth every single dime. You know how I love my Goose Island beers. Goose Island has come out with a bunch of different new brews that they sell in 4-packs and they are a bit more expensive, but oh, so worth it. I settled on Matilda last night. I’ve also had the Sofie. Also delicious. There are a few other varieties that I need to try also!
We grilled chicken drumsticks and made smashed potatoes on the side. I topped mine with sour cream and jalapenos. SO good!
To make these potatoes….boil red potatoes until they start to get soft. Put them on a cookie sheet and smash them. Sprinkle with olive oil and any sort of spices you’d like. Bake at 425 until they start to get crispy. Add cheese and cook until cheese melts. Top with whatever you’d like. Trust me. You won’t regret this. They are SO good!
I’m just hanging out with the girls today. We were going to head to the pool, but it’s rainy outside, so we are going to play and make something fabulous for dinner. I’m also looking forward to nap time so I can catch up with all of you! I hope you had a fabulous weekend!

Hooray for no mo school! When we moved out to the “sticks” I still worked in Chicago, and my firm was on North Michigan avenue, so it would take me 2 hours one way to get to work – it sucked, there was no time for anything!
Your daughter is adorable!! I’ve seen those potatoes on Pioneer Woman, I think she calls them smashed potatoes – I bought white potatoes over the weekend, I’ll have to give them a try.
I meant to say “no more” not “no mo” – ha!
