Grillin’ breakfast…

This morning we were up early dealing with a diaper explosion at 6 am so there was no sleeping in around this house.  Ugh.

We threw some sweats on and headed out to the grocery store after all normalcy was resumed.

We grabbed what we needed for the week and were home by 9 am.  The Good Eats Guy had big plans for brunch.   He was planning grilled breakfast burritos.

He took eggs, sausage, red pepper and tortillas outside and set to work.  He cooked the sausage and drained the grease.  Added the red peppers and eggs and cooked it up.  He then grilled the tortillas!

He brought everything in and we added cheese and salsa.

So delicious.  I was kicking myself for not getting any spinach at the grocery store.  I love spinach in breakfast!

I also may or may not have eaten a third one.  In my defense, they were small and I was STARVING!!  :)  I also told the Good Eats Guy that he is in charge of breakfast from now on.  These were awesome.  And one of the best parts is that only ONE pan was dirtied!  Yay!

Since we have already went to the store, and I’ve done a few loads of laundry we are planning on hanging out for the rest of the day and playing outside.  The sun is finally shining here!  I also need to start my book for book club.  We are reading Cutting for Stone this month.  Has anyone read this?

Anyone have any other book suggestions? We always looking for the next book to read!

  5. Diaper explosions = no fun. We had exorcist style vomit this morning (1st time, I was so sad for her! But I’m sure it won’t be the last time). Anyways, now that I’ve grossed everyone out….that breakfast looks amazing! I love the idea of grilling breakfast, how creative!

    I had something like that for breakfast, too. Only, I had to pay $9 for mine. And it wasn’t grilled. Yours was probably better.

  8. I’ve never thought to grill my breakfast before- what a good idea!

    I’m reading ‘Public Enemies’ about the 1930′s crime spree. It’s pretty long and intense, so maybe not the best for a book club, but it’s really good!
