I’m sorry….I’ve been a crappy blogger for the last week.  We’ve either been eating junk or nothing extra special that I want to talk about.  This morning was the first time I’ve made something in a few days that I want to share with you!!

First, the Good Eats Guy started out by grilling some bacon.  Yes, I said grilling.  Holy cow was this good.

We grill everything around here and I’m not sure why it has never dawned on us to grill bacon.  I mean, you can’t go wrong.  It tasted amazing and there was NO bacon smell in my house.  Definitely a win-win situation.

I then chopped up some of this fabulousness because I wanted to make my first ever frittata.  Yes, my first ever.  Once again, I may have been living under a rock! :)

Spinach, Bacon and Cheese Frittata

-8 eggs

-6 slices of chopped bacon

-1/2 cup of milk

-2 big handfuls of spinach

-1-2 Tablespoons of olive oil

-salt and pepper to taste

-1 cup of shredded cheddar cheese

First I greased my cast iron skillet.  Finally a purpose for this awful thing(I hate it…it’s so heavy and is so awkward to cook with, in my opinion.).  Cook the bacon.  Add to the pan.  I then added my spinach so it would wilt a little bit.

While this was happening I mixed up the eggs, milk and cheese.  After the wiliting happened, I added the egg mixture to the pan.

 

I cooked this on the stovetop for about 3 minutes.  Just until the edges started to cook and middle was still runny.  Kind of like cooking an omelet.

Then into my oven it went for 13 minutes.  And voila!

Breakfast was served.  Isn’t it so pretty?!

This tasted great and it was such a nice change from our usual breakfasts of scrambled eggs and toast or something of that fashion.

We’ll be making this again!  The Good Eats Guy was already brainstorming how he could add more meat to it next time!

Now, we are relaxing a bit and dinner is in the crock pot.  It’s so nice to know that I don’t have to worry about cooking dinner!  YAY!  And we are going to head to the ice cream shop later today for a summery treat!  It’s so nice out today!

  4. You should rename your blog Grill Girl :) I’ve never grilled bacon-genius! Does it flame up a lot because of the fat? That frittata looks great, I love frittatas. I have a cast iron grill pan but would like a skillet.

  5. I’ve actually never had a frittata, although I’m obsessed with eggs. I make them all the time. I also never touch my cast iron because I never know what to do with it. But your frittata looks great!
