It was a perfect night for grilling, friends. The sun was shining, the wind wasn’t blowing, and the bugs weren’t bad. I loved it.
We’ve had a crazy busy week this week. Hopefully next week things are going to slow down! Anyways, since it was such a busy week, we’ve been eating on the fly. As we ate dinner tonight, the Good Eats Guy and I were both talking about how nice it was to have a meal that tasted good and we felt good about eating!
I mean, we were eating something that looked like this…
How could you not be excited?!?!
We made some honey balsamic pork chops and roasted green beans.
I’m still excited about this dinner and we got done eating an hour ago. Yes, it was that good. And yes, you will be seeing it again.
Honey Balsamic Pork Chops
-1/4 cup balsamic vinegar
-1/4 cup honey
-2 T. butter
-1/4 teaspoon red pepper flakes
-1/4 teaspoon dried rosemary
-Pork chops (We used 2 butterfly pork chops.)
Warm ingredients in a pan until boiling. Boil for a few minutes and remove from heat. Grill pork chops and baste this sauce on chops while they are cooking.
This was a perfect summer meal for us!

Tonight I just tossed the beans in olive oil, some sea salt, and 2 minced cloves of garlic. It was simple, but oh, so good! If you’ve never roasted green beans, please do so soon!!
I must go and watch the season finales of Grey’s and Private Practice. What finales are you most looking forward to?
