I have eaten nothing blogworthy since last Tuesday night.  For real.  I’ve eaten on the fly or we’ve eaten out.   We had one of those weeks where we completely fell off of the eating and cooking at home wagons.  It’s been bad news.

But, I have a fabulous and easy menu already planned for the week and my grocery list completed.  We will be eating at home and cooking our meals!

Do you ever have weeks like this when you eat out too much?!!?

To start the week off on the right foot, the girls and I made banana bread for breakfast this morning.

Chocolate Chip Banana Bread

-1 1/4 cup sugar

-1/2 cup butter (softened)

-2 large eggs

-1 1/2 cups mashed bananas (I used 3)

-1/2 cup milk

-1 teaspoon vanilla

-2 1/2 cups flour

-1 teaspoon baking soda

-1 teaspoon salt

-1/4-1/2 cup chocolate chips

Cream butter and sugar together.  Add eggs and mix.  Stir in bananas, milk, and vanilla until smooth.  Then add baking soda, salt, and flour until mixed.  Add chocolate chips last.

Grease two loaf pans.  Place in a oven heated to 350 degrees.  Bake for approximately 50 minutes depending on your oven.  Cool on a wire rack!

Usually I don’t put chocolate chips into my banana bread, but with two little people in my house, I thought it would be a good addition.  They thought so too because there wasn’t a crumb left on their plates!  :)

 

Now, the rest of the day is going to be spent cleaning and hitting the grocery store!   I may have to slip a nap in somewhere…I’m tired.  These children of mine woke up at 5:30 the past two days.  They really need to learn the value of sleeping in on the weekends!

  6. 5:30 on the weekends!?!?! My mom used to put a clock in my bedroom and say you cannot get out of bed until the clock says Seven Zero Zero! Haha

    That bread looks so good – I was just thinking about some type of bread with chocolate chips in it!

  8. I hate weeks like that! After a few days of eating out, I come to my senses and realize I have to go shopping and plan meals stat!

  10. Any kind of banana bread is fantastic, but chocolate chip has a special place in my heart :) I hate busy weeks and feeling like all of done is eat out. The good feeling after it all though is getting back to a “normal” routine. Sounds like you are!

  11. We rarely eat out. Our problem — this week, for example — is that we get into cycle of eating dinners made with leftovers that just seem to go on for WAY too many nights in a row. Ugh! I’m ready for something newly made, and I think this yummy bread is it!
