So, I have this really good Mexican themed meal that you only need one pan to make.

Yup, you heard me correctly.  You only need to dirty ONE pan!

We’ve made this meal many times before, but we haven’t had this meal in probably over a year….I’m not sure why because it’s tasty!

Oh, and did I mention it only takes about 20 minutes to cook?

Quick Fix Burrito Skillet (slightly adapted from Kraft Foods)

-1 lb. ground turkey

-1 1/4 cup salsa

-1 cup water

-taco seasoning …a packet will work as well!

-kidney beans, drained

-5-6 6 inch tortillas cut up into pieces

-As much cheese makes you happy!

 

Brown the turkey.  Add the seasoning, salsa, water, and beans.  Bring to a boil.  Then, let simmer for 5 minutes or so.

Then add the tortillas and mix.

Add cheese to the top of this and add as much cheese as you’d like to the top of it.  Cover with a lid and let this continue to simmer until the cheese has melted.

Serve!

This is a quick and easy meal that tastes awesome!  It’s so easy to modify to your tastes also!

It was nice to have a dinner success after my mac and cheese failure last night!

After dinner I ran to Target and finished up some birthday shopping for the Little Miss and picked up some tights for each of the girls.  They are flower girls in a wedding this weekend.   I can’t wait to show you pics…they are going to be ADORABLE!  Oh!  And Chobani is on sale at Target this week….they were 5 for $6.  That’s a pretty decent price where I live, so I grabbed some because I think that the Good Eats Guy is going to start making overnight oats for breakfast and I didn’t want him to steal all of my stash!

    Oooh, now that’s delicious comfort food right there. My one pan meals are usually stir fries, but then it balances out b/c I’ll end up using like 2 chopping boards, 2knives, and at least 3 bowls. You win some, you lose some I guess :-) .

  9. I was sold on this recipe when you said only one pan. :) Sounds amazing.

    I always add chia seeds to my overnight oats, I find it makes a big difference in the texture. Also, frozen berries are good because when they thaw overnight they leak out some of the juice and add a lot of flavor.

    I always buy my chobani at Sam’s Club, it’s a little over $11 for 12.

    I make pasta in one pan… cook the pasta, drain and then put it back on the stove and add the sauce. This lets everything heat up together in one pot!
