I’m gonna do it…

Well.  I have big news.

Nope.  I’m not pregnant.  Don’t even start thinking that!

I’m going back to grad school.  Again.

I’m not sure if I’m excited about this or not, but I’m off on this adventure!  I need to finish a few classes to make one of my licenses transfer states, so I am just going to finish the second Master’s degree and call it good.

Oy.

Other than that, not much is going on around here.

I did, however, make one of my favorite comfort food meals for dinner.

What is your favorite comfort food?!?!?

My sister is going to be jealous.  She loves the stuff.   She requests that we make it when she visits.  On the other hand, the Good Eats Guy hates the stuff.

I made tater tot casserole.

It’s just two cans of tomato soup, three cans of green beans, one pound of browned ground beef, and a bag of tater tots.  Bake until the tots get crispy and call it dinner!

It’s comfort in a bowl.  For real.

Have you ever made or had this?!?!  How do you make yours?

My former co-workers always thought that I was weird because the way I made mine didn’t include cream of mushroom soup.  This is the only way my family has ever eaten tater tot casserole!

Another bonus is that I will have some great leftovers!! :)  Lunch is going to be DELISH!!

I’m off to catch up with my DVR and go snag an ice cream sandwich from the freezer!!

    I actually have had that tater tot casserole – years ago. Maybe it’s a Midwest thing?!

    I don’t ever make tater tots at home, that is just straight up dangerous for a single, carb loving girl haha

    your casserole sounds delicious. definitely pure comfort food. i’d be excited to have leftovers too if i made that. my kind of comfort food is either a ooey gooey cheesy pizza or a hot bowl of spicy noodles.

    I’ve never made tater tot casserole, but I’ve heard about it made with cream of mushroom soup instead of tomato. I’ve totally got a craving for tots now!

  8. I’ve never heard of this before! It definitely sounds comforting though :) I love homemade mac and cheese when I’m in need of a good comfort food. Good luck with grad school!

    I’ve never heard of tater tot casserole but it sounds very appealing to me right about now!?
