Well. I have big news.
Nope. I’m not pregnant. Don’t even start thinking that!
I’m going back to grad school. Again.
I’m not sure if I’m excited about this or not, but I’m off on this adventure! I need to finish a few classes to make one of my licenses transfer states, so I am just going to finish the second Master’s degree and call it good.
Other than that, not much is going on around here.
I did, however, make one of my favorite comfort food meals for dinner.

My sister is going to be jealous. She loves the stuff. She requests that we make it when she visits. On the other hand, the Good Eats Guy hates the stuff.
I made tater tot casserole.
It’s just two cans of tomato soup, three cans of green beans, one pound of browned ground beef, and a bag of tater tots. Bake until the tots get crispy and call it dinner!
It’s comfort in a bowl. For real.

My former co-workers always thought that I was weird because the way I made mine didn’t include cream of mushroom soup. This is the only way my family has ever eaten tater tot casserole!
Another bonus is that I will have some great leftovers!! Lunch is going to be DELISH!!
I’m off to catch up with my DVR and go snag an ice cream sandwich from the freezer!!
