Protein bars…

I feel as if this week has taken two weeks.  My brain is on overload and I have two more days of training to sit through this week.  I may not make it!  :)

How’s your week so far?

Dinners and lunches have been super quick and a little  disjointed.  We’ve been going in a few different directions, so leftovers have been on the menu.  And last night I had cereal.  It’s just one of those weeks!

So, I’ve been trying to find a recipe for good protein bars for a while.  I don’t like them….the Good Eats Guy does.  I just hate paying a dollar or a $1.50 per bar.  I’m cheap like that.  :)

I’ve been trying to make them for him.  The first few that I made were nasty.  That’s why you didn’t see the recipes here.  My husband will usually eat anything.  He wouldn’t even eat them.

Then, I found this recipe.  It was a definite success.

Nuts and seeds protein bar

Ingredients:

½ cup oatmeal
½ cup whole wheat flour or oat bran
6 scoops chocolate protein powder
1 cup non-fat dry milk
2 tbsp flaxseeds
2 tbsp sunflower seeds
¼ cup mixed nuts
¼ cup dried fruit
1/3 cup natural peanut butter
2 tsp vanilla
½ cup water

Directions:

Combine oatmeal, oat bran, protein powder, dry milk powder, seeds, nuts, and dried fruit in a bowl. Stir in natural peanut butter, vanilla and water until moist and spread with a wooden spoon or spatula into a non-stick baking dish. Place in the fridge for an hour until firm.

They aren’t very pretty, but they taste like a no bake cookie.  Even I thought they were pretty good.  And I don’t like protein bars!

I was very happy with this success!  I think that my wallet is too!  :)

Do you eat protein bars?!

I hope you are having a fabulous week!  I’m excited for a relaxing weekend!
