We had a pretty relaxing weekend.
Yesterday we got groceries and then I mentioned to my husband that I wanted to rearrange the furniture in our room in the next few weeks….he took that as he needed to do it immediately. So, he moved furniture and I watched!
We also watched Easy A and Cop Out last night.
I thought Easy A was hilarious. The husband didn’t love it so much.
I made it through about twenty minutes of Cop Out.

This is how I know summer is just around the corner…my favorite seasonal beer is back on the shelves. I saw this and squealed. I think I may have embarrassed my husband. I’m a huge Goose Island fan. This and 312 are my favorite!
For breakfast today, I continued my mission for great muffins!
Both the Good Eats Guy and I have deep love for orange cinnamon rolls. Anyways, I’ve been on a quest for the past couple of months to continue to try making the flavor of those transfer into muffins.
This is the closest I’ve come! They were pretty yummy! Even the little ones that live in my house approved of these! Of course…I did add a few chocolate chips to the last few muffins for them!
Orange Cinnamon Muffins
-2 cups flour
-3/4 cup sugar
-2 teaspoons baking powder
-1/2 teaspoon cinnamon
-2 eggs
-1 teaspoon vanilla
-1/2 cup orange juice
-1/2 cup applesauce
-1/2 cup milk
-zest of one orange
For the streusel topping…
-2 tablespoons of softened butter
-3 Tablespoons of flour
-3 Tablespoons of brown sugar
-1/4 teaspoon cinnamon
For the batter…Mix the dry ingredients in one bowl. Mix the wet ingredients in another bowl. Combine both bowls of stuff!
For the streusel…Mix everything together until it gets all crumbly!
Add the batter to a muffin pan and then add the streusel to the top of the pan.
Bake at 350 degrees until they are finished. Mine took about 20 minutes.
**The Little Miss wanted chocolate chips in her muffins this morning, so after pouring half of the pan, I added some chocolate chips to second half!
These turned out great! I was definitely pleased with the end result!
I’ll be making them again! And the Little Miss’ addition of chocolate chips was an awesome idea!
I spent the rest of the day cleaning, doing laundry, and I even made time for a nap!!
I don’t usually take a whole lot of naps, but today was definitely one of those days that I needed one!
Now, I’m just trying to prepare for the week and make sure that I am ready for Monday!

A few things:
1. I don’t make muffins nearly enough. This needs to change.
2. @ Goose Island, I get the same way when I see Sam Adams Octoberfest! It’s seriously my FAVORITE beer.
3. I’m so glad I’m off tomorrow. My husband came home this weekend and I didn’t think about school at all. On tap for tomorrow, recording The Gadget War on Garage Band for my struggling readers to follow along with!

Your muffins look awesome as well! We are lovers of orange rolls at my house too, but have never tried the flavors in muffin form. And…Easy A is definitely the third awesome thing in this post. Love it!
OMG wasn’t Cop Out just horrendous? I can’t believe I spent $1 at Redbox to get it. I’m still bitter about the fact! Easy A looks too cute, I need to add that to my Netflix queue.

Those muffins look and sound wonderful. I’ll bet my little ones would enjoy these as well. It’s been a while since hubby and I enjoyed a good movie date. We can’t rent cause it’s too noisy to hear anything anyways…sigh. I think the last movie we saw was The Tourist.

. Exciting week plans= Taught this morning (still thrilled to be back teaching group fitness), walking the bridge in Charleston with a friend & we’re going to a beer festival Saturday (I’m DD obviously haha).

I loved Easy A. Even my fiance liked it! This weekend I watched Star Wars Episodes 4 & 5 for the FIRST time! As resistant as I was, I actually really liked them, especially The Empire Strikes Back!
