This week has been one of those weeks where our nights have been jam packed and I haven’t cooked anything worthwhile to share for two days. Last night I ate a DISGUSTING sandwich from Wendy’s…I don’t know why I went there…I never like most of their menu! Anyways, tonight we had somewhere else to be, so it was home for a fast bite to eat and out of here. I had a grilled cheese that was completely unpictureworthy. Blah!
I’m excited for tomorrow night to cook again!
So, I decided that I should tell you about a muffin recipe that I made this weekend. It was pretty awesome. I’m a huge fan of fresh blueberries, so when I saw them on sale I had to have them!
Blueberry Muffins
-3/4 cup sugar
-1/2 cup butter
-2 eggs
-1.5 teaspoons vanilla
-2 c. flour
-2 teaspoons baking powder
-1/2 teaspoon salt
-1/2 c. milk
-1 1/2 c. blueberries
Mix together the butter and sugar. Add in the eggs. When eggs are combined, add vanilla and then milk. In a separate bowl combine flour, baking powder, and salt. Add to the mixture of liquid and mix. If the batter is too thick for you, add a few tablespoons of milk. Fold in blueberries.
I also made a streusel topping by mixing together a tablespoon of butter, 2 tablespoons of brown sugar, 2 tablespoons flour and a couple shakes of cinnamon!
Bake these at 375 until they start to brown. Eat!
We had these with my all time favorite breakfast. Ham and eggs. With a bit of Frank’s Hot Sauce sprinkled on the top!

I usually prep my breakfast the night before.
If I do an oatmeal bowl, I make it the night before too. Then I just heat it up in the morning.
Lately, I’ve been really into green monsters. Something about a smoothie just makes summer seem a little bit closer.
I try to cook breakfast when I can. I managed to make myself pancakes before an 8 am class today… I was quite pleased!
We usually save fun breakfasts like this for the weekend – the husband’s specialty is breakfast, so he is on weekend duty!
Franks makes everything better! I suck at making breakfast during the wk, I’m in such a hurry to get to work and end up having breakfast at my desk!
Muffins are looking fabulous…..I almost went to Wendy’s tonight after a wine event but decided not to. I abolutely love their chili-yum!

I don’t usually cook breakfast during the week. I’m always rushing to get to work on time. But I’d love to do it at least 1-2 times per week. Blueberries muffins would be perfect!! Yours look phenomenal!
I’m a big fan of blueberries also. They’re so healthy, easy to wash, and fun to eat. Most importantly, kiddies love them too. I need to start baking some muffins and these seem like the perfect ones to start with. Thanks for the recipe. Weekdays are always go go go for us so weekends are when we cook good breakfasts.

Ooooh blueberry muffins! Sounds delish! I wasn’t planning to do anything for valentines day breakfast, but I think my boyfriend would be totally surprised if I made these. And I’d just love to sink my teeth into them too!

I always try to make/cook breakfast because I’m a much better eater in the morning than I am at lunch. It’s so weird, but I really don’t like lunch. I typically do three snacks throughout the day – one at 10, 12, and 2. As a nurse lunch breaks are not always a given – so you gotta eat when you have a few minutes here and a few minutes there! I wish blueberries were in season – last time I was at the grocery store bberries were 4.99 for a tiny, tiny package : (
I love blueberry muffins, they’re tied with poppy seed for my favorite.
I almost always have overnight oats, or something similar for breakfast. That way all I have to do is take it out of the fridge and eat it. Easy is best in the mornings.
I love cooking breakfast. Its nice when you have time once in a while to actually spend time making something yummy.

I do the same thing- sometimes I’ll grab a fast food sandwich and think EW. How did I use to love this garbage??

I wish I could cook breakfast weekday mornings! Leaving the house at 5:15 am makes that nearly impossible for me! But I had an awesome time cooking baked oatmeal this weekend, which was fabulous (you’ll have read my post about it!
