Have you ever had one of those days where you arrive at work at 7:40 and the next time you look at the clock it is 1 and you realize you haven’t eaten yet? Then, when you do sit down to eat while over your computer you get a yogurt eaten and then someone needs something and you can’t finish the rest of lunch? I had one of those crazy, busy days. I have no idea where the time went today, but it stinkin’ flew!
In order to make up for my lack of lunch, I came home and made an awesome soup!
Taco Soup
-1 lb. ground beef
-taco seasoning or taco seasoning packet
-ranch dressing packet
-1 can chili beans, 1 can kidney beans, 1 can black beans (rinsed), 1 can cannellini beans (rinsed)
-1 can diced tomatoes
-2.5 cups water
-2 chicken bouillon cubes
Brown ground beef. When it is browned add taco seasoning and 1/2 cup of the water and let simmer for a few minutes until starts to thicken.
While the beef is browning, add everything else to a soup pan and bring to a boil. Add ground beef mixture and let soup simmer for 1-1.5 hours.
Top with sour cream and shredded cheddar!
This was really good! Next time I’m going to add some diced jalapenos to the top of mine!! :)
Once again, I got my husband (the soup hater) to eat soup and he liked it! Yay!

I’m not even going to give you the recipe for the breadsticks…they were BLAND! I’m going to work on those a little bit! At least they looked pretty!
Okay…so here’s a completely random question for you. How do you wash strawberries?
My hubby and I are debating this. He said he heard on the radio that you should take a paper towel and blot them because this lets them have more flavor and if you rinse them they soak up water and lose flavor. I just rinse mine as I think that blotting them will take tons of time! :) So, please, tell me what you do! :)
I’m now off to sit on the couch and not move for the next few hours. I’m pooped!

I typically just rinse them. I love soups in the winter, yummy! Especially when you get to enjoy it with your family.
I’m definitely still in “comfort food” mode. Love the looks of that soup!
And don’t you love days that fly by like that at work? Sure, there are drawbacks, but it sure beats tapping your finger on the desk with nothing to do…

I rinse my strawberries under the sink. I even take the extra time to scrub them good. I’m a bit of a clean freak like that.

I do a LOT of my prep work for dinners on Sunday night so that I don’t have much to do during the week! It’s a huge timesaver for me! My oldest loves to help and when she isn’t helping, she is entertaining her sister!

always wash! i read an article that said strawberries are one of the most highly pesticide infected fruits! eeeek! but i wash and blot – usually because i put them in my oats or yogurt and i don’t like watery yogurt or oats for that matter!
your soup looks delicious! we haven’t had a mexican night at our house in FOREVER so this might be making an appearance on our meal plan next week!
I love when time flies like that! Although I can’t make it more than a few hours before eating something. No matter how busy I am my stomach always seems to win.

I rinse strawberries and have never heard otherwise. Blotting just seems like so much work.
I rinse mine, but I have the same frustration with mushrooms. it takes me SO long to wipe off each mushroom that I end up not cooking them very often!
My culinary instructor said when it comes to berries, “If it’s on it, it’s in it.” Meaning that the membrane on berries is so thin that anything on berries will automatically end up in them too. So washing is kind of pointless no matter what! I still wash mine though – I just can’t get over leaving them as is

I rinse but I also only buy them when they are in season. So they always will taste good when I buy them! <3
