A meal and some movies…

Yesterday morning was grocery store morning.  I was incredibly disappointed that I drove to grocery store that’s a bit further away to buy hummus (Yes, I’m that crazy.), and they were out of the kind that I like.  It was sad.   I wanted Tribe jalapeno hummus and there was not a container to be seen.  I think that my husband thought I was going to cry!  We still ended up with all of these bags of groceries to put away.

And yes, I’m a genius and walked out without my reusable bags…I hate it when I do that.  Ugh.

I also made a few pit stops at Pier 1, Gordman’s and Target.   I love Pier 1…I don’t go in there very often because I know that I will always walk out with something!  And I also kept myself under control at Target.  It was pretty impressive.

What is the store that  you have problems keeping money in your wallet at?!!?

After running errands, it was time to head home for laundry, naps, and some hang out time!

A few weeks ago I got an email from Foodbuzz about a program called Family Bites that is sponsored by Hidden Valley Ranch and I had to submit three family friendly recipes and one of them needed to incorportate a Hidden Valley Ranch product.  My girls think ranch dressing is the best thing since sliced bread, so I figured why not try this out!  Anyways, I was selected to participate and we made two of the recipes I came up with last night!

We ended up with some awesome pork apple burgers and ranch roasted potatoes!

We’ve made the burgers before but decided that they needed a makeover.  So…the NEW and improved pork apple burgers!!

Pork Apple Burgers

You will need…

-1 lb. ground pork

-1 chopped red delicious apple

-1 cup panko bread crumbs

-1 T. Greek Seasoning

-1 T. Lawry’s Seasoned Salt

Mix everything together and form patties.  Grill or cook in a pan until they are cooked through!

Helpful hint with the burgers…top with barbeque sauce and horseradish sauce.  The flavors are AMAZING!  :)  They are always so juicy due to the apples in them!  When the Little Miss was little (and extremely picky) we’d always make extra ones and she’d eat them for the rest of the week.  She loves them!

And on the side, some ranch roasted potatoes.  My idea for these was to start cutting up potatoes and start dumping stuff into them.  I knew that they had to turn out pretty tasty after all the things I was putting in them.  As I was getting ready to put them in the pan, the Good Eats Guy suggested that I add some bacon.  Genius!

Ranch Roasted Potatoes

You’ll need…

-2-2.5 lbs of red potatoes, diced

-1/3 c. ranch dressing

-1/2 t. pepper

-1/4 t. ground oregano

-1 cup shredded cheddar cheese

-4 slices of cooked bacon that has been crushed up

Mix all of the ingredients together, BUT only use 1/2 of the cheese.

Put in a pan and cook at 425 degrees until they start to brown…mine took about 30 minutes.  Add the other half of the cheese to the top of these and cook until the cheese gets golden brown!

They were awesome!

We rounded our evening by watching these two movies.

Okay, I ended up making it through The Social Network and falling asleep 10 minutes into The A-Team.  I thought The Social Network was pretty good and my husband said The A-Team was AWESOME.

Today has been a day of some more errands and cooking up some Super Bowl treats that I will share with you later!

Happy Super Bowl Sunday!!  Who are you rooting for?

Have a great night!

  1. Those potatoes? OMFG. Thats all I have to say about that!

I keep forgetting that the A Team is out. I need to add to my netflix queue (just for Bradley Cooper alone)–thanks for the reminder. Sauces are what gets me at the grocery store-salsa, spaghetti sauce, marinades, you name it, I need it.

  2. Those potatoes look fab!

Whole Foods and Trader Joe’s seriously rob me of my money! I RARELY go into WF for that reason but it’s just so fun to look around!

  3. Target is bad for me!!! I spend way too much $$$ there!~

  7. Both recipes look/sound delicious! I was cheering for the Steelers tonight since I went to high school with the running back, but booo…they played horribly. I’m the same way at Target, I always spend way too much!

  8. Costco. My hubby does not let me go to Costco alone because he knows I’d spend way too much there.
Loving your ranch roasted potatoes. I don’t eat pork, but I know hubby would be drooling over those burgers. Hope you enjoyed the super bowl.

  9. OMG those ranch potatoes look AMAZING!! Too bad I am going Vegan this week :( I also have a huge problem staying under control at Target…

  12. Mmmm… ranch. Who doesn’t love it!? Kettle chips makes a ranch flavor now (closest to Doritos Cooler Ranch)… so good! I too hate when I forget my reusable bags, especially on a big trip like the one you made!
