A relaxing Sunday…

I had all kinds of witty things to say earlier today.  I’ve completely lost them.   So, please, bear with me as I write this post.  It may not go well!!

I spent the day hanging out and watching football.  I chopped up veggies and fruit so I didn’t have to during the week.  I made chili and cornbread.  I finished laundry.  I played with the girls.  I watched more football.  Have I mentioned that I really like Sundays?!

Tonight for dinner, I made something that I had been thinking about making for a long time.  I’d never made it before, and I don’t know why!

I made Biz’s Buffalo Chicken Chili.

Holy cow…this was delish!

I followed the recipe exactly as it says to.  I just added some kidney beans to mine because I love them!  :)

I love variations of chili and using ground chicken and some hot sauce really spiced this up!  I will be making it again!

I made some corn bread to serve with this.  If I eat chili I need corn bread.  My hubby likes Fritos with his chili.

What do you eat your chili with?

Cornbread

You need…

-1 cup corn meal

-1 cup flour

-1/3 cup sugar

-1/2 teaspoon salt

-4 teaspoons baking powder

-1 cup milk

-1 egg

-1/4 cup vegetable oil

Mix the dry ingredients in a bowl.  Add wet ingredients and mix.  Cook at 425 for 20 minutes.

I may have left it in the oven just a few minutes too long.  But it was still good!

All in all, a perfect Sunday night meal!   (I’m still playing with the settings on my new camera…excuse the redness of this pic!)

Now to finish watching this football game and then to bed…it’s going to be a crazy, busy week again!

    Hooray for trying the chili!! It’s still my favorite, although I think my sweet potato and black bean chili is a close second. :D

  5. ahhh I was totally supposed to make chili today and didn’t have all the ingredients to make the chili and corn bread. I’m so flipping jealous.

    Toootally making it tomorrow! and I think I may add hot sauce now! =) amazing!

    Sounds like a great winter night meal! Homemade cornbread always looks daunting but after looking at the recipe it doesn’t look too hard. Everything looks delish.

    Sounds like a nice little Sunday! Chili & cornbread is perfect football watching food. If I don’t make cornbread with my chili, I usually top it with toasted broken up tortilla or soda bread. Yum Yum!

    I forget what I wanted to write about all the time. It drives me crazy, so when I remember (which is only sometimes) I type my ideas into my cell phone. It helps, provided I remember to do it. :)
