Hello, weekend.

I made it!  We were able to eat from the pantry, fridge, and freezer until I could get to the grocery store tommorrow!  We are out of eggs, milk, fresh veggies, and meat.  But, we made it!

Tonight’s dinner was a bit of an invention!

I had chicken breast in the freezer, and I thought about grilling them with some BBQ sauce (YES.  We grill in the winter.  All winter long.  The Good Eats Guy has been known to go out and grill in a snow storm if he has to.  What can I say, we LOVE our grill!!  Anyone else ever do this?!), but the Good Eats Guy turned his nose up.  Then I wanted to make panko breaded chicken strips.  I was out of panko.  So I kept looking….and found some multigrain Food Should Taste Good chips!  BINGO!

I put those little guys in a plastic baggie and got out the rolling pin to smoosh them.

Then I dumped some chili power, cumin, garlic salt, and paprika into the chips.   No measurements…just a few shakes of each spice!

I took two eggs and maybe 1/4 milk and mixed in a bowl.

Cut the chicken into strips.

Dip the strips into egg/milk mixture.  Put in bag with chips and seasoning and SHAKE!

I baked at 400 degrees for 12 minutes…it may take you less…my chicken was still a little frozen!  Whoops!

I also baked these on a wire rack on top of a cookie sheet!  Just make sure to spray the wire rack!  Works like a charm!

Served with the last of the lettuce we had and some green beans.

YUM!!!  These were really good!

And that’s that for my week of pulling from what I had….I don’t think it turned out too bad!  I’m just thankful that the lettuce I had didn’t go bad as I thought it would!

Now, to relax and hang out!  I love three day weekends and that’s what I have!

My goals over this weekend include getting groceries, watching lots of football, and to fix this situation.

  1. That looks really good! This weekend, I want to relax for once. I am not very good at sitting on my booty. I’ll feel accomplished if I manage to be lazy! :)

    Plus, I’m making steak for the first time. Which I’m extremely nervous about. I’m a baker. This is way out of my comfort zone…

    Great job with the fridge/cabinet/freezer clean out! And a very creative way around bread crumbs. The chicken fingers look perfect. And your helper is a cutie ;) My goals this weekend? Clean, relax, shop with my Mama, and watch lots of football!

  7. That’s a really good idea, these look yummy! I have some of the olive chips sitting in my cabinet, maybe I will try this :) PS We grill in the winter too – and by ‘we’ I mean my husband haha. He just cooked some steaks out there a few nights ago, but he had to shovel out a path through the snow on our deck first!
