Well, today was my day to work and my husbands day to stay home with the little one!  It was nice to go back, but I am so far behind!  It was one of those days that I didn’t feel like I sat down at all!  Oh well, kiddos can’t control when they get sick!

I started the morning off with this guy.

This was seriously the best grapefruit that I’ve had in a long time!

Lunch was a salad that I slammed.  I don’t know that I really even chewed it.  It definitely went unpictured!

Dinner was a new recipe for the December/January issue of Taste of Home.

We made Hawaiian Chicken.

The first thing to notice…this recipe calls for sliced pineapple.  Unfortunately I grabbed the wrong can.

Boo!  I needed the juice, but never fear!  I came up with a solution!

This worked like a dream!

Anyways, on to the Hawaiian Chicken.

You need….

-1/2 c. flour

-1 tsp. salt

-1/4 tsp. pepper

-chicken breast

-oil

-1 c. sugar

-2 Tablespoons cornstarch

-1 tsp. chicken boullion granules

- 1 can sliced pineapple

-1/4 tsp. ground ginger (I left this out…I’m not a huge fan of ginger.)

-1/2 c. cider vinegar

-green pepper sliced

-cooked rice

Combine flour, salt and pepper in a plastic baggie.  Add chicken and coat.  Warm the oil (a couple tablespoons) in a skillet and brown chicken.  When chicken is browned, put in a greased baking dish.

Drain pineapple into a 2 cup measuring cup.  Add enough cold water to the pineapple juice to equal 1 1/4 cup.  Add vinegar and soy sauce to juice and water.

In a sauce pan, combine sugar, cornstarch, boullion,and ginger (if you use it.)  Add pineapple juice mixture slowly while stirring.  Bring to a boil.  Cook and stir for two minutes until it is thickened!

Pour sauce over chicken and add pineapple and green pepper slices.  Cook for 20-30 minutes at 350 degrees.  Until chicken is 170 degrees!

You’ll end up with something like this!

This meal was seriously good.  Even my husband liked it a lot and he didn’t think that he would.  It’s definitely a keeper.

I served it over rice!

It doesn’t look very pretty, but I assure you….definitely good!

Do you ever have meals that might not look very pretty, but are totally yummy?!

Next time I make this, I will halve the sauce also.  After I mixed everything up, I noticed that the recipe called for SIX chicken breasts and not the two that I used!  Whoops!

I’m currently on the market for a new camera.  So sad!  Some little fingers got their hands on my camera and my zoom doesn’t work anymore and I have to pry the lens open!  Anyways, what kind of camera do you have?  Do you like it?! I’ll be looking for another point and shoot because the big, beautiful camera that I want is a bit out of the price range right now!

I’m off to read some blogs and wait for the series premiere of Shonda Rhimes’ new show Off the Map (I think that’s what it’s called.:))  I pretty much love anything that she works on, so I have high hopes for this one!

    I recently bought a Canon Rebel and its awesome, but I love my point and shoot too. I have a Canon Powershot and Ive never had a problem with it. Plus, it can take a tumble pretty well. I’ve dropped it about 500 times.

  4. Looks fabulous!! I use Hubb’s big fancy camera. I think it’s a Canon 40D? I’m not sure … sometimes I just use my iPhone camera though :)

    I wish my husband liked sweet with meat, but he doesn’t. I am making a pork roast for dinner and would love to sautee apples with it, but it grosses him out!

    Before Christmas, all my pictures were taken with an Olympus 1010, which two years ago was priced at $256, so the price is probably lower now. It has a “cuisine” setting, although truth be told, I took almost all my pictures on the sport setting with the super macro.

  6. Thanks for the congrats!! And we used to do a similar marinade for Hawaiin steaks that would marinate in the fridge for 3 days. So good!

  7. I have an Olympus Pen which takes beautiful pictures (although I wish I had a macro lens for it) and my point and shoot is a Nikon Coolpix. Its really easy to use and inexpensive.

  8. There are these pumpkin-butterscotch cookies I made that look blah but taste AMAZING. My dad usually doesn’t like sweets but he asked me to make them repeatedly!

    After owning the camera for three years, I am just starting to learn to manipulate some of the settings, such as white balance and so forth. Now if only I could find that owner’s manual…
