Some oldies, but goodies!!

I had another unexpected day at home with a 3 year old.  But we headed to the doctor’s office and she got some medicine, so hopefully she is on the mend!

Now if the rest of us can avoid the sickies, it will have been a successful day!

After all of the doctor fun, I sat on the couch and caught up on some email and tv time while my little one slept.  I was reminded how much I LOVE The Gilmore Girls.  I own all seasons on DVD (yes, I’m a nerd), but haven’t watched it in a long time.  An episode happened to be on as I was perusing for something to watch!  It kind of made my afternoon!

Love them!  And I’m still sad that the show ended!

And since it was a cold, dreary day, I decided that we needed to have something warm and yummy for dinner.

So I whipped up some Sausage, Potato and Cabbage Stew from Rachael Ray’s recipe.  Mine has some variations…as in larger amounts of the ingredients, but other than that, it’s basically the same!

Here’s what you need…

  • 1 pound kielbasa, sliced
  • 1/2  onion, chopped (I’ve used both red and white!)
  • 3-4 tablespoons spicy brown mustard
  • 1 1/2 tablespoons red wine vinegar (recipe calls for white wine vinegar…I didn’t have any!)
  • 5 cups chicken broth
  • 1 1/2 pounds red potatoes, cut into 1/2-inch pieces
  • 3 cups cabbage
  • Pepper to taste

In a large pot, cook the kielbasa and onion over medium heat until the onion is tender, about 10 minutes. Add chicken broth and mix in mustard and red wine vinegar.  Add potatoes.  Add a little pepper, too.  Cook until potatoes start to get tender.  Add cabbage and cook for another 15-20 minutes. Serve with warm, crusty bread. Or crackers.  Or anything else you’d like!

By the time I cooked the kielbasa and onion and then added the rest of the ingredients, it took me about 1.5 hours because I cooked it at a super low temperature.  I like to slow cook soups, but if you are crunched for time, this soup can cook in about 20 minutes!

Seriously.  SO good!!  We ate this with some yummy multi-grain bread from the bakery!

I love to eat soup in the winter.  My husband on the other hand, does not.  This is a soup he will eat without complaint.  I am however on a search for more yummy soups because he will get tired of this one if I keep making it over and over!

We lived in Europe when I was younger…and these were one of my favorite candies!  My mom found them at a store when she was out of town and bought us some!!  I was so excited!

    And yeah, I just discovered Gilmore Girls this wknd. One of my co-workers lent me six seasons of it and I’m already on Season 2. I am not afraid to admit I watched 7 hours of it today!

    Baked potato soup is my fave :)

    Gilmore Girls is my favorite show. I love it. In fact, I also own every season, and have watched an episode every night before bed for probably the last 5 years. Maybe longer. I go through the entire series, and once Im finished I start again. :)

    Um, something makes me feel like you must have been favored when it comes to the Haribo? I only got one roll in my stocking, and they were gone before January, so what gives?

    haha I haven’t watched the Gilmore Girls since my roommate in college watched every episode! That takes me back :)
