Remember me?
Oh, my goodness, I missed this! I’m already excited about this and only three sentences in!
Blogging was a great joy for me for many months during the spring and summer, but when school started again, something had to give in order for me to function as a normal adult! Unfortunately blogging was the thing that I had to step away from as I was not able to give it the amount of time that I wanted to give it. :(
Since my step away from blogging I’ve felt like something was missing. We started eating horribly, I stopped meal planning, my exercising has fallen off drastically, and I really missed the people that I “met” through blogging. I knew something needed to change!
I think that the thing that made me really consider coming back to blogging was when my aunt said to me over Christmas that she missed my blog. My response to her was that I really missed it too. So, I’ve spent the past few weeks trying to decide if I could add my blog back to my daily routine…and I’ve decided that I am sure going to try. With a little time management (which I need some practice with) I think I’ll be just fine! I’m excited to start blogging again as I really feel that it is going to help me achieve some personal goals that I have! (I’ll fill you in on those a bit later!)
Since I’ve blogged last….my little ladies are getting so big! They are so much fun and it’s so cute to see how much they really love each other!
Other than that, we are just trying to get back with our healthy lifestyle. We want to get back to eating and exercising as we were last summer as we were feeling great at that point!
So, as a start to my blogging again….here’s dinner from last night!
Tex-Mex Pork Chops
What you need….
-Pork Chops
-1 can of Ro-tel
-1/4 cup of tomato soup
-1/2 can of corn
-1/2 an onion diced
-1/2 teaspoon cumin (I will cut this down next time.)
-1/4 teaspoon pepper
Saute onions in a skillet. When onions become transparent, add pork chops and cook through. When pork chops are done, add in the rest of the ingredients and heat until warm!
I served these over a bed of couscous!
I’m starting to get the menu back under control around here…now I just need to start to tackle the exercise portion again of my goals! :)
I’ll leave you with that for now! I’m home with a sick three year old today, so I better go and make her a very bland lunch!
What goals do you have for the year?

oh. my. gosh. I thought you fell off the face of the planet! So happy to see you back!
Thanks, Chelsey! So glad to be back!!
Look who is back! I always get sad when I see some bloggers leave, but so happy when they return! I also know how hard it is to blog and fit it into an already hectic schedule. I went back to work in Sept, and since then I’ve had to cut it back from everyday blogging to about 3 times a week. Welcome back!
Thanks, Ally! I hope your new job is going well!! This is going to be a test of my time management for sure!
Welcome back!! It’s a lot easier for me to blog since my husband watches football all weekend and my college daughter is way too busy for me these days.
Your girls are getting big – love the Christmas picture!
I went back to Weight Watchers, I lost 70 pounds 11 years ago and kept it off until I starting taking insulin, then all of a sudden I could eat more pizza – just take more insulin!
So I am back to lost 30 pounds again – the eye opener has been portion size – not so much what I was eating but how much!
Thanks, Biz!! I hope that your daughter is doing great with college!
Welcome back! Your girls are adorable and I am bookmarking the pork chop recipe.
Thanks, Meg!
If ever I decide to cook, I will cook this.
And, so glad your blog is being creeped by cheap hostels in Taipei. Never know when I might want to take a trip…
So happy to see you are back–hooray! Just one day you were gone and that made me sad
Hope your girl feels better!
Oh I just saw this picture of the girls -they are too cute!
